This data was gathered using the AirBnB Scraper on Apify. The scraper ran for approximately 90 minutes with "Cornwall, UK" entered into the 'Location' field. The output contains over 2000 columns, so has been provided in both CSV and JSON formats to minimise the risk of data loss.

This is certainly not a complete dataset for every AirBnB in Cornwall, but given AirBnB do not provide a public API (unless you're a partner), this is a good starter for ten.
